Grilled Eggplant in Marjoram Sauce

- 2 Eggplant
- ¼ cup olive oil
- ¼ tbsp lemon zest
- Salt
Peperduür Ingredients:
- Marjoram Ground
- Garlic Minced
- Black Pepper Ground
How To
- Layer the eggplant slices and sprinkle with salt. Let stand for one hour to drain bitter juices. Rinse off the salt and pat slices until dry.
- Pre-heat grill or broiler.
- Stir olive oil, marjoram ground, minced garlic, lemon zest, and pepper to prepare the Marjoram Sauce.
- Brush the eggplant slices with olive oil. Place on the grill or boil until brown and tender. 5-7 minutes per side.
- Arrange the eggplant slices, overlapping them on a serving plate and serve with marjoram sauce.
