Grilled Eggplant in Marjoram Sauce

Ingredients:

  • 2 Eggplant
  • ¼ cup olive oil
  • ¼ tbsp lemon zest
  • Salt

Peperduür Ingredients:

  • Marjoram Ground
  • Garlic Minced
  • Black Pepper Ground

How To

  • Layer the eggplant slices and sprinkle with salt. Let stand for one hour to drain bitter juices. Rinse off the salt and pat slices until dry. 
  • Pre-heat grill or broiler.
  • Stir olive oil, marjoram ground, minced garlic, lemon zest, and pepper to prepare the Marjoram Sauce.
  • Brush the eggplant slices with olive oil. Place on the grill or boil until brown and tender. 5-7 minutes per side.
  • Arrange the eggplant slices, overlapping them on a serving plate and serve with marjoram sauce.
